The Bayou - Easton, PA

The Bayou first opened in Bethlehem, PA in 2014 and has been delivering exceptionally tasty eats ever since. Recently, their Easton, PA location also opened, expanding their reach throughout the Lehigh Valley.

Though many of their noshes feature meat, it is possible to have a delicious vegetarian or vegan meal here when out with friends or family. Throw in one of their inventive (and strong) cocktails and you've got yourself the perfect meal.

This week, I met up with a friend at their Easton location for after work cocktails and we couldn't resist trying a few of their smaller plates. You can find their full menu here, but read below for what I enjoyed this time around.


FLASH FRIED B.E.P.
Chives, Lemon Zest, Cayenne
I've had these every time I've been to The Bayou and they never disappoint. I'd never had anything similar, so their fantastic flavor and texture really stood out to me. As a vegetarian, I love legumes, so it is awesome to be able to try a new way to eat them. They are a bit salty, but I love salt so I don't mind one bit. The lemon zest gives it the perfect citrus freshness and the cayenne sends a slight sizzle to your tastebuds. I definitely recommend trying them!

HUSH PUPPIES
Jalepeno, Aged Cheddar, Herb Chimichurri
You can't go wrong with hush puppies. The highlight here is the chimichurri sauce - I could add this to anything! They should bottle it and sell it, it is that delicious.

BROWN SUGAR BEIGNETS
Maple Crème Anglaise, Confectioners Sugar
More like beign-YAY! To be honest, this was the main reason I wanted to visit The Bayou. On my last trip to the Easton location, my eyes were bigger than my stomach and I did not have room to try them. This time, I made sure I had a chance to devour one fluffy little treat. While the sauce was honestly nothing special (it was a very liquid consistency like milk) the beignets themselves did not even need it - they were tasty enough on their own.

APPLE BARREL
Apple Pie Moonshine, Goldschlager, Cider Beer, Ginger Ale
Another staple to my Bayou trips, the Apple Barrel is a cinnamon-y sweet cocktail with just the right amount of fall spice flavor.

JALAPEÑO MARGARITA
Jalapeño Infused Tequila, Grand Mariner, OJ, Fresh Lime
Refreshing but spicy. The first sip gave me a start, but after I refreshed my palette this spicy marg was perfection. If you're into spicy drinks, I recommend. If not - skip it!

The menu features many salads I'd also like to try in the future, as well as other sides, cocktails, and a peanut butter mousse. I'll certainly be back in the future!
